Fully Balanced Friday: July 2019

It’s been a while, but I’m finally updating my food log. I’m thinking about posting these once a month at most from now on. I’ve also been experimenting with taking a multivitamin and eating an even cleaner diet so we’ll see how that goes. Now, on to the food!

Breakfast:

Green Smoothie

Green smoothies are truly a great way to make sure that you’re getting enough vegetables since every serving has two cups of spinach and it they also taste amazing and are great for the hot D.C. summer. I got this one from Kate Flower’s Ebook but I substituted milk for water to make sure I was getting more calcium.

Ingredients:
2 cups spinach
½ frozen banana
1 tbsp chia seeds
2 tbsp pumpkin seeds
1 tbsp almond butter
1 scoop vanilla protein powder
1 cup milk
Directions:
Add all ingredients to blender and blend!

Lunch:

Shredded Summer Salad

This recipe comes from Girl on the Bloor (weird name but great recipe!) I love the colorfulness of this salad and it tasted great. It was also really easy to prepare throughout the week.

Salad:

Ingredients:
½ cup shredded beets
½ cup shredded zucchini
½ cup shredded carrots
½ cup chopped red cabbage
½ cup cooked quinoa
½ cup chick peas
sesame seeds (optional)
Directions:
Place ingredients in bowl
Top with dressing and sesame seeds
Enjoy!

Dressing:

Ingredients:
½ tbsp tahini
½ clove garlic
1 tsp lemon juice
1 tsp water
salt
pepper
Directions:
Stir all ingredients of dressing until smooth

Dinner:

Teriyaki Salmon with Grilled Pineapple

Ingredients:
1 filet of salmon
1 tbsp premade teriyaki dressing 2 slices of pineapple
½ cup cooked rice
Directions:
Marinate salmon in teriyaki sauce over night
Boil water and cook rice for 10 minutes while oven is preheating
On broil, cook salmon and pineapple for 5 minutes per side
Finish cooking rice and let stand
Serve

Snack/Dessert:

Hazelnuts and Dried Apricots

I ate about 1 handful of each if ever I was hungry throughout the day. I think dried apricots are now my favorite new snack. I had never had them before but they literally tasted like candy. And don’t forget to stay hydrated!
